Yeah, the FC5 package selection is pretty spartan.  It installs the
gnome admin tools, and the gamut of the system-configure-* RH
configurators, but the default desktop set leaves a lot to be desired.
 I usually go through and customize what I want installed while I'm in
the installation, instead of waiting for afterward.

You can use YUM to update everything.  It sucks because RPM sucks, but
it's better than a poke in the eye with a sharp stick.  You might also
want to take a look at http://www.fedorafaq.org/ because they have a
lot of nice tips and tricks for the novice installer to use to get the
necessities working (3D, sound, mp3, etc).

I couldn't tell you exactly what I customize, but I can say that I put
in all the KDE apps (I like choice), nasm, mc, mrtg, rdesktop,
Thunderbird (why they ship with that POS Evolution, I'll never know),
and a few others that escape my mind at the moment.  I know this
probably isn't too helpful, but that's my 2c worth. :-)  Next time I
do an workstation install at work I'll be documenting it, so I'll post
that here if I can remember to. ;)
